Grilled Peach Pork Chops

Ingredients
  

  • 4 bone-in pork chops  (about 1 inch thick)
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/2 cup peach preserves 
  • 1 serrano pepper finely chopped 
  • 2 Tablespoons soy sauce  low-sodium
  • 1 teaspoon garlic  minced finely
  • 1 Tablespoon olive oil (for brushing the grill)

Method
 

  1. Combine all marinade ingredients in a medium bowl. Coat both sides of the pork chops evenly.
  2. Marinate the pork chops for at least 1–2 hours (or overnight for a deeper flavor). Keep refrigerated.
  3. Preheat the grill to 450°F (medium-high heat). Lightly oil the grates to prevent sticking.
  4. Grill the pork chops for 3–4 minutes per side for thin cuts, or 5–6 minutes per side for thicker, bone-in chops — until the internal temperature reaches 145°F.
  5. Rest the pork chops for 5 minutes before slicing. This helps the juices redistribute, keeping the meat tender and flavorful.
  6. (Optional) Brush with a bit of reserved marinade or glaze during the final minute for extra caramelization and a shiny finish.
  7. For effortless preparation and easy cleanup, combine all the marinade ingredients in a medium bowl or a zip-top bag. Add the pork chops, seal tightly, and toss to coat evenly. This simple marinating method infuses the meat with deep flavor and ensures it stays tender and juicy.
    When grilling, place the pork chops on the grill at the 2 o’clock position to achieve beautiful sear marks. After a few minutes, rotate each chop to the 10 o’clock position to create that perfect diamond pattern. Flip and repeat on the other side. The chops should have a slight spring when pressed — a sign they’re cooked through yet still tender.
    To test doneness, use the thumb-and-finger touch test:
    • The soft pad of your thumb feels like rare,
    • Medium firmness feels like medium doneness,
    • And firm with little give indicates well-done.
    Alternatively, use a thermometer — the internal temperature should reach 145 °F, followed by a brief rest for juicy, flavorful results.
